The Wines

The respect we have for what the vineyards provide us year after year, is intrinsic in the wines we produce.

We are supporters of the endogenous characteristics and genuineness, producing wines that reveal the specificities of indigenous varieties and the local “Terroir”.

The winemaking and aging process respect tradition, without the intervention of wood, producing elegant, complex, aromatic wines, very fresh, with excellent structure and longevity, being considered by some critics, the ones that best represent the “Classic Dão”.

Without wood intervention, it aged in stainless steel for 10 years.

"Terroir"

Organoleptic Tasting

Ruby color with brownish tints, typical of the age. Complex fresh aroma, some notes of dry pine, in the mouth a delicate structure, velvety with fine tannins, excellent freshness and typicality.

Paring

Very versatile, works well with tapas, light dishes of meat or cod and without food. It should be served at a temperature of 16º to 18ºc.

Intense color, the aroma of reds fruits predominatees. intense flavor with smooth tanins, good structure, fresh and well balanced with excelllent mounth and typicalness.

Produced with the Encruzado grape variety, it was vinified with pre-fermentative skin maceration and temperature control. Of this limited production, 2860 numbered bottles were bottled.

Aging for 6 months on fine yeast sludge in stainless steel tanks.

Organoleptic Tasting

Citric color, with slight golden reflections. Delicate notes of fruit, pear, apple and citrus. Very mineral, with excellent volume and freshness, where the variety is striking

Paring

Excellent company for light tapas, fish and seafood, very sweet tooth. It should be served at a temperature of 10º to 12ºc.

Deep red color with bricked nuances. Aroma with expression of ripe red fruits, some humus, giving a note of rusticity. Structured body, with good volume and firm and rustic tannins, persistent.

It goes well with red meat dishes, intense and structured. It should be served at a temperature of 16º to 18ºc

Produced with the varieties Encruzado, Malvasia Fina, Rabo de Ovelha and Bical, it was vinified with pre-fermentative skin maceration and temperature control.

Aging

Aging for 6 months on fine yeast sludge in stainless steel tanks.

Citric color, very aromatic with notes of orchard fruit. In the mouth, very greedy, full of freshness and minerality.

Paring

Goes well with fish and seafood dishes. It should be served at a temperature of 10º to 12ºc.
